Despite being a Vietnamese eatery, PHO's bright, hip-looking interior, complete with a huge wall-mounted LCD TV, makes it look more like an American-style fast food outlet. --By Niang Chen, translated by Angel Pu

A. Vietnamese Coffee (NT$45) is brewed with a classic Vietnamese technique. It takes a while for the strong, dark-colored coffee to drip into the cup, which contains condensed milk, but the resulting flavors are well worth the wait.

B. Beef Pho (NT$130) and Cold Pork Slices (NT$60)--The soup for the Beef Pho is cooked with a lot of vegetables and beef bones for eight hours before some white rock sugar is added for a hint of sweetness. This boiling soup is then poured over the Pho noodles (also boiled) and raw beef fillets, which are cooked by the hot broth. A provided plate of fresh lemon slices, Chinese basil and mint leaves can also be added to this hearty dish, which also includes beef meatballs and beef tripe.
